Waimea Blossom

Waimea Blossom is a cocktail, not a tiki drink. In every tiki bar you tend to find a drink or two that patrons enjoy and request despite a lack of over the top garnish or the missing tiki mug. Tart cherry juice, fresh lemon and two rums are mixed with cinnamon and black walnut. If that sounds like a rum soaked cherry pie, you’re right.

1 oz Light Rum (we used Plantation 3 star)

1.25 oz Jamaican Rum such as Coruba or Appleton

2 oz Tart Cherry juice

.75 oz Fresh Lemon Juice strained

.75 oz Cinnamon Syrup

2 dashes Black Walnut bitters

3 dashes Fee Foam or Aquafaba

Combine everything in a shaker with ice. Shake very well to develop the foam. Strain into a fancy glass such as martini or coupe. Garnish with a few lemon segments rested over the glass. The trick to this cocktail is balancing the cinnamon and tartness. The cinnamon should be in the background and the drink overall should be more sweet/tart, not sweet.
