Marooned

In June 2009, Sunshine and the husband took a road trip from the Hukilau down to the Florida Keys. While walking around on the second day, they came across the Rum Barrel. The Rum Barrel, now closed, had the largest rum selection in all of Florida at the time. After a flight of outstanding rum it was time to try some cocktails. The server recommended Marooned as a sweet drink that was very popular with locals. Well, we had two each and have made hundreds since. Luckily the server wrote down the recipe.

1oz Cruzan Vanilla or other Vanilla Rum

1oz Cruzan Coconut or other Coconut Rum

1tblsp Coco Lopez

2oz each fresh Orange Juice

2oz Pineapple Juice

3/4oz Cruzan Blackstrap Rum

Combine everything in a shaker except blackstrap, with crushed ice. Shake very well to combine the coco lopez. Pour over glass filled with crushed ice. Float blackstrap on top. Garnish with pineapple spears.

Needless to say, we have made several hundred of Marooned over the past dozen years. At Tiki Oasis 2010 we served 250 in one night and Kalani may have had a few too many.
