Panama Punch with Selvarey Rum

This just might be the only recipe in Sunshine Tiki's tool kit that uses just a single silver rum.  Why?  Generally silver rums are rarely good enough to sip alone.  Mojitos are fine with a single white rum but those are really about the mint and fresh citrus.  Selvarey silver rum is a very nice upgrade to your usual clear sugar cane spirit.  The aroma is slightly burnt with a touch of fresh cane and the finish is middle dry to lightly sweet.  Lets make punch!

Panama Punch

2 ounces Selvarey Silver

1.5 ounces Pineapple Juice

1 ounce fresh Lime Juice

.5 ounce falernum*

.5 ounce Passion fruit syrup

1 dash Grapefruit bitters (optional)

Shake all ingredient together with ice in a shaker.  Strain into fancy glass filled with crushed ice.  Garnish with pineapple, lime and parasol.  The tartness of limes vary from season to season and variety.  Balance the tartness of this punch by adding a little more passion fruit syrup if needed.
