Smudge Pot

If you live in the sun belt of the southern states you have likely heard of a smudge pot. These oil burning chimney like devices have kept our citrus crops from freezing on cold nights for many decades. In honor of the humble smudge pot we created this spirit forward cocktail. Smokey and sweet, strong and slightly bitter. The combination of Demerara Rum and Amaro work wonderfully together while the smokiness of Mezcal provides a little fun for your nose. Try mixing this with as little ingredient substitution as possible.

1 oz Demerara Rum (Lemon Hart 1804 80 proof or El Dorado 8yr)

.75 oz Amaro Italian Liquor (approx 21% alcohol by volume)

.5 oz Vida Mezcal (a medium smokey silver)

1 dash Orange Angostura Bitters

1 rounded tsp white Sugar

Combine all ingredients in a mixing glass. Stir well until sugar dissolves. Add ice and stir very well until diluted and chilled. Strain into double rocks glass with a single large ice cub or sphere. Garnish with a large orange peel that has been torched with black edges.
