It’s been a while since we invited a new host into the Zen Tiki Lounge.  This week we are joined by Krista!  A huge fan of tiki and pop culture herself, Krista fits right in here in the ZTL.  Now Who’s ready for a cocktail?  Try a simple grapefruit daiquiri.  Sunshine and Krista sip this low calorie drink while Xavier Cugat and other great latin artists of the day.  This week is full of tips for entertaining with less calories, both food and drink.  You must try the Hawaiian Bruschetta paired with the Grapefruit Daiquiri.  Simply magical together.  And for the veggie lovers Krista has some tips on platters with dips that won’t break your waist.  We’re also talking about reusing things around the bar, keeping that cocktail lifestyle as green as possible.  Theres plenty more but my inebriated fingers are growing weak.  Listen to the show for all the rest.  Cheers!

 

Grapefruit Daiquiri with just 182 Calories

2 ounces white grapefruit juice

2 ounces light/amber rum (10 cane or Rhum Barbancourt)

1/4 ounce cinnamon infused syrup

Shake with ice and pour over crushed ice and sip away your cares.

 

Hawaiian Bruschetta  just 40 calories per piece

1 pack Kings Hawaiian Rolls

3/4 cup chopped red onion

3/4 cup crushed pineapple

2 tsp butter

2 tablespoon dark brown sugar

Saute onion and pineapple with butter, adding sugar after onions have already gotten soft and translucent.  Stir till sugar dissolves completely.  Set aside.  Slice rolls into three each, creating three thinner slices from each roll.  Toast on a baking sheet in a 350 degree until corners start to brown, remove from oven.  Top each piece with a teaspoon of sauté mixture.  Garnish with chopped cilantro.

SQ BeachPalmsWelcome to the Zen Tiki Lounge, the Tiki Bar that lives in your head.  Sunshine and Starshine are in the lounge sipping a very un tiki libation this week, the Bloody Mary.  Sometimes your drink choice is the result of having lots of something on hand.  Waste not want not.  But we take the garnish up a few notches to make it feel a little over the top in the tiki bar.  Music this week comes to us from the amazing Les Baxter and The Surfers.  Sunshine was in a hurry to listen to all the albums he just converted from vinyl.  Starshine reluctantly shares her story of holiday euthanasia.  It pretty much is what you think but her story is almost nail biting.  After doggy is put to rest……Sunshine gives us a good look at all the tiki weekend events that are coming over the next few months.  There is lots to choose from on both sides of the US and we will give info on other events around the globe as details come in.  In order of appearance:

Aloha and welcome to the Zen Tiki Lounge, the tiki bar that lives in your head.  Sunshine, Starshine and Kalani sit at the bar for the first time this new year.  Sunshine is very happy to now own a turntable and has converted some exotica albums for the podcast.  This week we listen to Arthur Lyman’s Hawaiian Sunset and Martin Denny’s Quiet Village.  Can’t go wrong with those two classic examples of great vintage exotica.  Our cocktail this week was inspired by all the fresh citrus we have ripening in Southern California.  Fresh grapefruit, limes and oranges combine with El Dorado 15, Plantation 5 and 10 Cane rums, a little homemade falernum and some brown sugar syrup.  A zesty drink packed with vitamin C and exotic spices.  Speaking of vinyl albums, Kalani brought in some more classics like Carmen Miranda, Hilo Hattie and Webley Edwards.  Plenty to keep us relaxing on our bar stools during the next few podcasts.  And if you ever wanted to hear the ladies sing you will love this episode.  A stiff drink removes just enough inhibition for a spontaneous duet of Kokomo.  Fun!

The Unnamed Cocktail

1 ounce El Dorado 15

1 ounce Plantation 5

1 ounce 10 Cane

3 ounces fresh grapefruit, lime and orange juices, any proportion you like

1/2 ounce falernum, homemade is best

1/2 ounce brown sugar syrup

Add all to blender and pulse with 2 cups crushed or cracked ice.  Pour into large tiki mug and enjoy a stiff cocktail packed with cold fighting vitamin C ;)

This weeks podcast was just found in a dusty place, deep inside the macbook.  Apparently recorded back in early September, Kalani and Sunshine popped into the lounge for cocktails and some great music from The Exotics.  Hear three awesome tracks from this great band that hails from Milwaukee.  Don Nelson who is not only in the band but also operates the Foundation Tiki Bar in Milwaukee was nice enough to drop a copy of the album with us.  This podcast will seem like going back in time since the Taboo event happened over a month ago.  But, the music, cocktails and banter still sound fresh.  Get a kickin recipe for a Jack Daniels ice cream cake you can do at home and some tips from Kalani about her weight loss challenges.  More, fresh and new podcasts coming very soon.

Whiskey Lemon Ice Cream Cake

1 Box Lemon Cake Mix

1 16oz tub Cool Whip

1 tsp Bourbon Vanilla

1 Tblsp Lemon Zest

1 tub Vanilla Bean Ice Cream

Jack Daniels, according to cake recipe

Prepare cake to recipe on box for a two layer round or square cake.  Replace the water with Jack Daniels, usually 1 1/3 to 1 1/2 cups of whiskey.  Bake according to box.  Cool cakes.  Slice off top of cooled cakes if they mounded, to make them flat.  Wrap cakes in plastic wrap and freeze for an hour.  While cake is in freezer, add the vanilla to the Cool Whip and set in refrigerator till needed.  Remove cakes from freezer, remove plastic wrap.  Place first cake on platter.  In a bowl or mixer, stir ice cream just till it is soft enough to smoosh onto cake.  Add second layer of cake.  Quickly frost cake with Cool Whip and put in the freezer for at least an hour.  Slice and server.  Looks fabulous and tastes amazing.  You can use this same method and sub any liquor you like.  Play with ice cream flavors, cake flavors and shapes.

Continuing our series of home tiki bar visits, we stop by the Flaming Tiki Lounge and Gardens.  This home paradise has been created by the Kilmers, a husband and wife duo who have partnered to build their perfect backyard tropical garden.  Complete with koi pond, lush foliage, tiki torches and several areas to entertain.  And lets not forget the tasty cocktails.  We enjoyed two tasty drinks that we you will hear us sipping on the podcast.  While at the Flaming Tiki we had the opportunity to interview Kelly Hiphipahula who shares some stories of bar tending and tiki drink shenanigans.  Visit her web site and see some of the fabulous drinks she has conconcted over the years along with a great visual example of what a tropical cocktail should look like.  We have personally sampled some of Kellys drinks and she won’t steer you wrong.  Towards the end of our evening we celebrated two tiki birthdays and shared some cake and drinks.  The show concludes with two great tunes from the Ding Dong Devils.

For the third time in over 5 years, all four hosts are here in the Zen Tiki Lounge.  This episode may be a bit loud, reminiscent of a drunken frat party, but still very well worth the listen.  Sunshine, Pumpkin, Starshine and Kalani are all here fighting to own the microphone.  To get us started we try the newly concocted Sailor Mary cocktail.  This punch like drink is bright red and well garnished and will be served at Tiki Oasis for our official room crawl party.  Can’t make it to Tiki Oasis or one of the other weekend events this Summer, just stay tuned to this podcast for highlights and shenanigans.  Pumpkin is ahead of her game this time and is sharing her list of BS holidays for the month of August.  Don’t forget to celebrate national hair pulling day?  And, by listener requests, we have added 100% more exotica to the show.  The tunes are louder and we play em longer.  We will also be ditching Pumpkins usual quote at the end of the show for a song from one of our favorite bands or a classic exotic artist.  This week we play out the show with The Exotics and their wonderful tune “Shanghai.”  We still have a bit of room for a few more listeners  to join us for a live podcast in August if you are attending Tiki Oasis, just send a note to mail@zentikilounge.com to let us know you are interested.  Cocktails will be served, 21 and over ONLY.

Sailor Mary

2 ounces Sailor Jerry Rum

.5 ounces Passion Fruit Liquor

2 ounces unsweetened Cranberry Juice

1 dash Angostura Orange Bitters

Squeeze of fresh Lemon

Shake lightly with ice.  Strain into hurricane glass filled with crushed ice.  Garnish with orange segment, cherry and umbrella.

So you may not have been able to run off to Palm Springs this weekend, but Sunshine has put together a recap of the weekend event.  The heat was intense but so was the music, cocktails and shenanigans.  Rory Snyder put on a great event with excellent music and cocktails.  Martini Kings, Tikiyaki Orchestra, Elminators and Hula Girls were all there.  Cherry Capri made an appearance by the pool and hosted the fashion show.  Trio Restaurant hosted the bars and Coruba and Appleton Rums sponsored.  If you have a chance to get to Palm Springs we recommend you visit the Caliente Tropics for some relaxation by the pool and some great drinks to go with all the heat and sun.  The weekend proved to be very memorable.  Enjoy the show.
